Pork Chilli

 
Ingredients:
~ Pork (cut in medium pieces) - 1 Kg.
~ Onion (cut in medium pieces) - 2.
~ Capsicum (cut in medium pieces) - 1.
~ Spring Onion (cut in medium pieces) - 2
~ Ginger Garlic paste - 2 tsp.
~ Bafat powder - 2 tsp.
~ Soya Chilli sauce - 1 tsp.
~ Vinegar - 1 tsp
Turmeric powder - 1/2 tsp.
~ Oil - 2 tbsp.
Salt - as per taste.

Method:
~ Cook Pork in a Pan with little water and set aside.
~ Heat Oil in a Pan and fry the Onions till light brown.
~ Now add Ginger Garlic paste and Turmeric powder and fry for 1 minute.
~ Add the cooked Pork pieces (along with the water), Vinegar and cook for 2 minutes.
~ Add Capsicum, Bafat powder, Soya Chilli sauce, Salt and cook for sometime, until dry.
~ Now add Spring Onions, stir and cook for 1 minute.
Serve hot. 

Masala Mutton Curry

Ingredients:
~ Mutton (cut in medium pieces) - 1 Kg.
~ Potato (medium sized) - 2
~ Bay leaves - 3.
~ Onion chopped - 4.
~ Green Chilli (slit) - 4.
~ Ginger chopped - 1" piece.
~ Garlic chopped - 6 pods.
Mustard seeds  - 1 tsp.
Cloves - 4.
~ Cardamom - 5.
~ Pepper - 1 tsp.
~ Cinnamon stick - 1 (2.5cms) piece.
~ Curry leaves - 5.
Turmeric powder - 1/2 tsp.
~ Olive Oil - 2 tbsp.
~ Lemon juice - 2 tsp.
~ Coriander leaves - for garnish.
Salt - as per taste.

Method:
~ Masala Powder: Grind the Bay leaves, Cinnamon, Cardamom, Cloves & Pepper until
   the mixture is a fine powder.
~ Place the mutton pieces, ground masala powder, half of the chopped onions, Green
   chillies, Ginger, Garlic & Turmeric powder in a large Pan. Add sufficient water and
   bring to boil.
~ Now add Potato pieces and cook for 3 minutes.
~ Reduce heat and simmer until the mutton is cooked thoroughly.
~ Add Salt and  continue to simmer until mixture is almost dry (do not allow it to burn),
   add little water if necessary. Setr this aside.
~ Heat Olive oil in a frying Pan. Add Musturd seeds and cook until they splutter.
~ Add remaining Onion chops and stir until light brown.
~ Now add Curry leaves and fry for 2 minutes.
~ Add the cooked Mutton mixture and the Lemon juice.
~ Stir gently and cook for around 3 minutes.
Garnish by sprinkling Coriander leaves around the dish.
~ Serve hot with Dosa (or Rice, Roti or Chapathi).
