Mutton Vindaloo (in Beer)

Ingredients:
~ Mutton (cut in medium pieces) - 1 Kg.
~ Onion sliced - 1.
~ Potato (cut in medium pieces) - 2.
~ Kashmiri Red Chilli  - 10.
~ Ginger - 1" piece.
~ Garlic chopped - 10 pods.
~ Ghee - 1 tbsp.
~ Vegetable Oil - 2 tbsp.
Turmeric powder - 1/2 tsp.
~ Cardamom - 2.
~ Cumin (Jeera) seeds - 3 tsp.
~ Salt - as per taste.
~ Vinegar - 2 tsp.
~ Coriander Leaves chopped - 1 cup.
~ Beer - 1 pint.

Method:
~ Marinate Mutton with Beer, Turmeric powder, Vinegar, Salt and keep aside for 1 hr.
~ Grind Kashmiri Red Chillies, Ginger, Cumin Seeds, Cardamom to make a paste.
~ Heat Vegetable Oil in a Pan, add Onions and fry till golden brown.
~ Add Garlic and fry for sometime.
~ Add chopped Coriander leaves and stir fry for 2 minutes.
~ Now add the ground paste and fry for 2 minutes, stirring frequently. 
~ Add marinated Mutton pieces along with the marinate mixture, close the lid and cook
   till the meat is tender.
~ Now add Potato pieces and cook for 10 minutes.
~ Add Ghee and serve hot with Rice, Chapathi, Roti or Bread.

Noodles with Sausage & mixed Veg Stir Fry

Ingredients:
~ Sausages (cut in small pieces) - 12 (1 pkt).
~ Onion sliced - 2.
~ Tomato chopped - 1.
~ Potato (cut in small pieces) - 1.
~ Green Peas - 1 cup.
~ Carrot (cut in small pieces) - 2.
~ Green Chilli (cut in small pieces) - 2.
~ Olive Oil - 2 tbsp.
~ Turmeric Powder - 1/2 tsp.
~ Cumin (Jeera) Powder - 1/2 tsp.
~ Coriander Powder - 2 tbsp.
~ Maggie cube - 1.
~ Ginger chopped - 2" piece.
~ Garlic chopped - 5 pods.
~ Chicken Masala powder - 2 tbsp.
~ Garam Masala powder - 1 tsp.
~ Noodles - 4 pkts (or as required for 4 servings).
~ Soya sauce - 2 tsp.
~ Coriander leaves chopped - for garnishing.
~ Salt - as per taste.

Method: 
Heat Olive oil in a Pan, add Onions, Ginger, Garlic, Green Chillies and saute till Onions
   are golden brown.
~ Add Tomato and fry for sometime.
~ Add the Potatoes, Carrot, Green Peas, 2 cups water, Coriander powder, Maggie
   cube, close the lid and allow to cook.
~ Add Sausage, Chicken Masala powder and cook for sometime.
~ Once the Sausages are cooked, add Soya sauce, sprinkle Garam Masala powder and
   keep on flame until sufficiently dry.
~ Garnish with Coriander leaves.
~ Cook Noodles in sufficient water and drain.
~ Sprinkle Soya sauce on the noodles and serve with Sausage & mixed veg stir fry 
   while hot.

Pepper Beef

Ingredients:
~ Beef (cut in medium pieces) - 1 Kg.
~ Onion sliced - 3.
~ Olive Oil - 2 tbsp.
~ Turmeric Powder - 1/2 tsp.
~ Cumin (Jeera) - 1 tbsp.
~ Pepper - 1 tbsp.
~ Green Chilli (slit lengthwise) - 5.
~ Ginger chopped - 2" piece.
~ Garlic chopped - 12 pods.
~ Musturd seeds - 1/2 tsp.
~ Potato chopped - 1.
~ Curry leaves - 5.
~ Tamrind juice - Lime sized ball.
~ Coriander leaves chopped - for garnishing.
~ Salt - as per taste.

Method: 
~ Pressure cook Beef with chopped Onions (2), Garlic, Ginger, Green Chillies and Salt.
~ Dry roast Pepper, Musturd seeds, Cumin (Jeera) seeds.
~ Powder these roasted ingredients adding Turmeric powder.
~ Heat Olive oil in a Pan, add Curry leaves, Onions (1) and saute till golden brown.
~ Add the pressure cooked beef, ground powder, tamrind juice, chopped Potato and cook
   for 5 - 10 minutes until the gravy becomes thick.
~ Garnish with Coriander leaves.
~ Serve hot with Rice, Roti or Chapathi.

Prawns Masala with Noodles

Ingredients:
~ Prawns (medium or big sized) - 10.
~ Onion sliced - 1.
~ Tomato sliced - 1.
~ Olive Oil - 2 tbsp.
~ Vinegar - 2 tsp.
~ Turmeric Powder - 1/2 tsp.
~ Cumin (Jeera) Powder - 1/2 tsp.
~ Coriander Powder - 2 tbsp.
~ Ginger Garlic Paste - 2 tsp.
~ Kimball Thai Chilli Sauce - 4 tbsp.
~ BBQ Sauce - 2 tsp.
~ Fish Masala Powder - 2 tbsp (or as per spicy required).
~ Noodles - 4 pkts (or as required for 4 servings).
~ Soya sauce - 2 tsp.
~ Spring Onions chopped - 3.
~ Coriander leaves chopped - for garnishing.
~ Salt - as per taste.

Method: 
~ Marinate the Prawns with Vinegar, Turmeric
   powder, Cumin powder, Coriander powder,
   Ginger Garlic Paste, Kimball Thai Chilli Sauce,
   BBQ Sauce, Fish Masala powder & Salt.
~ Keep it aside for 2 hrs in Refrigerator.
~ Heat Olive oil in a Pan, add Onions and saute
   till golden brown.
~ Add Tomato and fry for sometime.
~ Add the Prawns along with the marinated 
   mixture into the pan, close the lid and allow to cook.
~ If required add sufficient water, so that the
   Prawns cook properly and will not get burnt.
~ Once the Prawns are cooked, remove the lid,
   add chopped Spring Onions and keep on flame
   until sufficiently dry.
~ Garnish with Coriander leaves.
~ Cook Noodles in sufficient water and drain.
~ Sprinkle Soya sauce on the noodles and serve
   with Prawns while hot.

Chicken Sukka (with Sambar Powder)

Ingredients:
~ Chicken (cut in medium pieces) - 1 Kg.
~ Onion sliced  - 1.
~ Ginger chopped - 2" piece.
~ Garlic chopped - 5 pods.
~ Green Chilli (cut in small pieces) - 2.
~ Tomato chopped - 1.
~ Potato (cut im medium pieces) - 2.
~ Maggie cube - 1.
~ Olive Oil - 2 tsp.
Turmeric Powder - 1/2 tsp.
~ Curry leaves - 5.
~ Mint leaves chopped - 5.
~ Sambar powder - 2 tbsp.
~ Coriander Powder - 2 tsp.
~ Coconut grated - 2 tbsp.
~ Musturd seeds - 1/2 tsp.
~ Cumin (Jeera) Powder - 1/2 tsp.
~ Salt - as per taste.
~ Coriander Leaves chopped - for garnish.

Method:
~ Heat Oil in a Pan, add Turmeric powder, Curry leaves, Musturd seeds, Cumin powder
   and allow to sputter.
~ Add Onion and saute for sometime.
~ Now add Garlic, Ginger, Green Chillies and fry for sometime.
~ Add Tomato, Maggie cube and stir for sometime.
~ Now add the Chicken pieces, Potato pieces, Mint leaves, close the lid and cook till
   chicken is tender.
~ Add Sambar powder, Coconut, lower the flame and simmer until dry.
~ Garnish with Coriander leaves and serve hot with Bread, Roti or Chapathi.

Beef Schezwan Fry

Ingredients:
~ Beef (cut in thin stripes) - 1/2 Kg.
~ Onion sliced  - 2.
~ Ginger Garlic paste - 1 tsp.
~ Tomato chopped - 1.
~ Cooking Oil - 2 tsp.
Turmeric Powder - 1/2 tsp.
~ Curry leaves chopped - 3.
~ Red Chilli powder - 1 tbsp.
~ Vinegar - 1 tsp.
~ Schezwan sauce - 2 tbsp.
~ Coriander Powder - 1 tsp.
~ Cumin (Jeera) Powder - 1/2 tsp.
~ Salt - as per taste.
~ Coriander Leaves chopped - for garnish.

Method:
~ Marinate the Beef stripes with Vinegar, Ginger Garlic paste, Turmeric powder,
   Schezwan sauce, Red Chilli powder, Coriander powder, Cumin powder and Salt.
~ Keep for marination for 2 hrs.
~ Heat oil in a Pan, add Turmeric powder, Curry leaves, Onion and saute for sometime.
~ Add Tomato and stir for sometime.
~ Now add the marinated Beef stripes and fry until done, stirring frequently.
~ Garnish with Coriander leaves and serve hot.

Tuna Fish Potli

Ingredients:
~ Tuna Fish (canned) - 150 Gms.
    (Tuna Fish can be substituted with Mutton/Chicken/Beef Kheema)
~ Onion chopped - 1.
~ Ginger chopped - 1" piece.
~ Garlic chopped - 2 pods.
~ Green chilli chopped - 1.
~ Bafat powder - 1 tbsp.
Cumin (Jeera) powder - 1/2 tsp.
Turmeric powder - 1 tsp.
~ Potato chopped - 1.
~ Oil - as required for deep frying.
~ Maida - 2 cups.
~ Rawa - 1 cup.
Salt - as per taste.
~ Coriander Leaves chopped - for garnish.

Method:
~ Heat Oil in a Pan, add Turmeric powder, Cumin (Jeera) powder, Onion, Ginger, Garlic,
   Green chilli & saute for sometime.
~ Add Potato, Bafat powder, stir well and
   cook for 2 minutes (add sufficient water).
Now add Tuna fish from the can, Salt and
   cook for 10 minutes, until dry
~ Garnish with Chopped Coriander leaves
   & allow to cool.
~ In a bowl, mix Maida, Rawa, Salt and knead
   well (to make the dough to prepare Puri's).
~ Make small balls of the above dough and roll
   to make small Puri's.
~ Place 1 tbsp of the cooked Tuna masala in each rolled Puri's and make Potlis.
   (see the pic alongside).
~ Heat Oil in a deep Pan and deep fry the Potli's.
~ Serve hot.

Prawns Chilli

Ingredients:
~ Prawns (medium size) - 20.
~ Onion (cut in medium size cubes) - 2.
~ Capsicum (cut in medium pieces) - 1.
~ Spring Onion (cut in medium pieces) - 3
~ Ginger Garlic paste - 2 tsp.
~ Fish Masala powder - 3 tsp.
~ Soya Chilli sauce - 1 tsp.
~ Fish sauce - 1 tsp.
~ Tomato chopped - 1.
Turmeric powder - 1/2 tsp.
~ Maggie cube - 1.
~ Olive Oil - 2 tbsp.
Salt - as per taste.
~ Coriander leaves chopped - for garnishing.

Method:
~ Dissolve Maggie cube in a cup of warm water and keep aside.
~ Heat Oil in a Pan and fry the Onions till light brown.
~ Now add Ginger Garlic paste, Tomato, Turmeric powder and fry for 1 minute.
~ Add Prawns and cook for 2 minutes.
~ Now add the dissolved Maggie cube water and cook for about 2 minutes.
~ Add Capsicum, Fish Masala powder, Soya Chilli sauce, Fish sauce, Salt and cook for
   sometime, until dry.
~ Now add Spring Onions, stir and cook for 1 minute.
~ Garnish with Coriander leaves and Serve hot.

Kasha Mangsho (Bengali style Mutton Curry)

Ingredients:
~ Mutton (cut in medium pieces) - 1/2 Kg.
~ Onion sliced - 1.
~ Ginger Garlic paste - 1 tsp.
Musturd Oil - 1 tbsp.
~ Tomato sliced - 1.
~ Potato sliced - 2.
~ Green Chilli (slit lengthwise) - 3.
~ Coriander powder - 1 tsp.
Turmeric powder - 1 tsp.
~ Cumin (Jeera) powder - 1 tsp.
~ Cumin (Jeera) - 1/2 tsp.
~ Red Chilli power - 1 tsp.
~ Curry leaves - 4.
~ Coconut graed - 1/2 cup.
~ Ghee - 1 tbsp.
Salt - as per taste.
~ Coriander leaves chopped - for garnishing.

Method:
~ Marinate cleaned Mutton in 1/2 tsp Turmeric powder and 1/2 tablespoon Mustard Oil
   for half an hour.
~ Dissolve Turmeric powder, Red Chilli Powder, Coriander powder, Ginger Garlic paste
   & Cumin powder in 3 cups water and keep aside.
~ Heat mustard oil, add Curry Leaves, Onions and saute until golden brown.
~ Pour in the masala solution all at once and cook till the oil comes to surface.
~ Add Green chillies and boil and simmer with a lid on for 10 minutes.
~ Now add the marinated Mutton, Tomatoes, stir well and cover the pan.
~ Cook on medium heat for half an hour till the meat is almost done.
~ Fry the Potato slices in Ghee in another Pan till they are golden brown.
~ Add the Potato slices to the meat, add Salt, and cook covered for about 15 minutes.
~ Simulateneously, heat Ghee in a frying pan, add grated Coconut and fry well till they are
   brown.
~ Now ad the Cumin seeds and fry till they sputter.
~ Remove from the fire, and pour the Ghee, Coconut, and Cumin seeds over the Mutton
   curry.
~ Stir well, remove from fire, garnish with Coriander leaves and set aside for a while
   before serving.

Beef Medley

Ingredients:
~ Beef (boneless, cut in small stripes) - 1/2 Kg.
~ Onion sliced - 2.
~ Ginger chopped - 1" piece
~ Garlic chopped - 8 pods.
~ Green Chilli (Slit lengthwise) - 3.
~ Musturd seeds - 1/2 tsp.
~ Tomato chopped - 1.
~ Rajma - 1/2 cup.
~ Black eye Beans - 1/2 cup.
~ Green Peas - 1/2 cup.
~ Carrot (cut in small pieces) - 2.
~ Potato (cut in small pieces) - 2.
~ Bafat powder - 2 tbsp.
~ Coriander powder - 2 tsp.
Turmeric powder - 1/2 tsp.
~ Cumin (Jeera) powder - 1/2 tsp.
~ Tomato sauce - 1 tbsp.
~ Maggie Cube - 1.
~ Curry leaves - 4.
~ Bread slices - 10 to 12.
~ Olive Oil - 2 tbsp.
Salt - as per taste.
~ Coriander leaves chopped - for garnishing.

Method:
~ Soak Rajma, Black eye Beans in water for atleast 8 hrs.
~ Pressure cook Beef with sufficient water, along with Rajma, Black eye Beans and
   Maggie cube.
~ In a deep Pan, heat Olive Oil and add Musturd seeds, Turmeric powder, Cumin powder
   and Curry leaves. Allow the musturd seeds to splutter.
~ Add Oions and saute till light brown.
~ Now add Ginger, Garlic and Green chillies 
   and fry for 1 minute.
~ Add the pressure cooked Beef along with
   Rajma, Black eye Beans and the water.
   Cook for 2 minutes
~ Add Tomato, Green peas, Carrot, Potato,
   Coriander powder, Bafat powder, Salt with
   sufficient water and cook for sometime.
~ Now add Tomato sauce, stir and cook for 1 minute.
~ Now place the Bread slices on top, cover lid and cook for 5 minutes on low flame. 
~ Garnish with Coriander leaves and Serve hot.
