Kasha Mangsho (Bengali style Mutton Curry)

Ingredients:
~ Mutton (cut in medium pieces) - 1/2 Kg.
~ Onion sliced - 1.
~ Ginger Garlic paste - 1 tsp.
Musturd Oil - 1 tbsp.
~ Tomato sliced - 1.
~ Potato sliced - 2.
~ Green Chilli (slit lengthwise) - 3.
~ Coriander powder - 1 tsp.
Turmeric powder - 1 tsp.
~ Cumin (Jeera) powder - 1 tsp.
~ Cumin (Jeera) - 1/2 tsp.
~ Red Chilli power - 1 tsp.
~ Curry leaves - 4.
~ Coconut graed - 1/2 cup.
~ Ghee - 1 tbsp.
Salt - as per taste.
~ Coriander leaves chopped - for garnishing.

Method:
~ Marinate cleaned Mutton in 1/2 tsp Turmeric powder and 1/2 tablespoon Mustard Oil
   for half an hour.
~ Dissolve Turmeric powder, Red Chilli Powder, Coriander powder, Ginger Garlic paste
   & Cumin powder in 3 cups water and keep aside.
~ Heat mustard oil, add Curry Leaves, Onions and saute until golden brown.
~ Pour in the masala solution all at once and cook till the oil comes to surface.
~ Add Green chillies and boil and simmer with a lid on for 10 minutes.
~ Now add the marinated Mutton, Tomatoes, stir well and cover the pan.
~ Cook on medium heat for half an hour till the meat is almost done.
~ Fry the Potato slices in Ghee in another Pan till they are golden brown.
~ Add the Potato slices to the meat, add Salt, and cook covered for about 15 minutes.
~ Simulateneously, heat Ghee in a frying pan, add grated Coconut and fry well till they are
   brown.
~ Now ad the Cumin seeds and fry till they sputter.
~ Remove from the fire, and pour the Ghee, Coconut, and Cumin seeds over the Mutton
   curry.
~ Stir well, remove from fire, garnish with Coriander leaves and set aside for a while
   before serving.
